Ingredients


2 cups cooked rice (preferably cold)

1 cup chicken breast, diced

2 eggs, beaten

1 cup mixed vegetables (carrot, peas, corn)

2 tbsp soy sauce

1 tbsp oil

Salt and pepper to taste



Instructions


1. Heat oil in a pan and cook chicken until fully cooked.

2. Push chicken to the side and scramble eggs in the same pan.

3. Add vegetables and stir-fry 2–3 minutes.

4. Add rice and soy sauce, mixing everything together until heated through.

5. Season with salt and pepper as needed.

Use leftover rice for better texture.
